Blend and Nocellara, these are the two EVO oil varieties of the Sant’Elia olive grove: scent, color and flavors of Sicily, coming directly from our Nocellara del Belice and Biancolilla olive trees.
Blend e Nocellara are the two EVO oil varieties offered by the Sant’Elia olive grove. They are the result of the cold pressing of two different olive varieties: the Nocellara del Belice cultivar, also known as Mazara’s olive; and the Biancolilla’s, the harvesting of which is considered one of the oldest in Italy.
The Sant’Elia olive grove EVO oil (i.e. Extra Virgin Olive Oil) owes its name to the mechanical processes of crushing. This procedure enables the fresh and unaltered preservation of the organoleptic properties of the oil, that can be stored for an extended period of time. Therefore, it is a product without defects that maintains as much as possible the intact flavors and fragrances of the fruit from which it derives.
When analyzing the chemistry that characterizes the extra virgin olive oil, it must comply with a series of parameters, amongst which a maximum free acidity of 0,8%.
Nocellara
100% Nocellara del Belice. This oil is obtained from the cold pressing of olives, entirely of the Nocellara variety. The resulting flavor is fresh and strong, with fruity notes, and a slightly spicy aftertaste on the palate. Thanks to the polyphenols’ richness and to the natural tendency of the Nocellara olives to preserve their organoleptic properties overtime, this oil maintains its scents unaltered for a long time. Recommended on all types of dishes, from meat-based ones, to legume soups and fish, it enhances with a strong brio even particularly structured dishes.

Blend
The blend is the result of the wise mix of olives from our Biancolilla and Nocellara trees.
The two-olive-variety blend, one with a delicate taste, the other with a stronger one, allows us to obtain a territorially unique oil. This oil presents a lighter flavor, yet rich of nuances, with an herbaceous scent, spacing from green tomato to almond and herbs.
